Ixora and Strawberry Ice Cream

DO you remember seeing children pulling out the stamen of an ixora flower to get a drop of its nectar? Well, this recipe combines the sweetness of the strawberry with the ixora flowers. This recipe was first published in Flavours magazine.

  1. Boil water, then stir in the sugar. Cool, then blend syrup together with the ixora flowers and strawberries to a smooth paste.
  2. Transfer mixture to a bowl, and add in the lime juice. Chill for 3 hours.
  3. Whisk the egg white until light and fluffy. Combine with ixora mixture. Mix well, then place into an ice cream maker and follow the manufacturer’s instructions to make ice cream.
