Wash and drain basmati rice. Keep aside while preparing other ingredients.
Heat oil and add cinnamon, clove, cumin,onion, garlic, ginger, tomato and chicken. Stir well and let it cook for 10 minutes.
Add rice, carrot, baby corn, beans, ground coriander, black pepper, salt and water.
Stir to mix well. Cover and cook till the rice is fluffy.
Garnish with mint leaves. Serve with sliced cucumber.
Tips: Water and rice should be measured using the same cup. Use rice cooker to cook this dish. The rice will be fluffy and the chicken will be tender. You can use store bought mixed vegetables but do not use potatoes.
