Recipe Ingredient

  • 1 lemon, thinly sliced
  • 300ml fresh lemon juice
  • 250ml rum
  • 10-12 sprigs fresh peppermint leaves
  • 50g castor sugar
  • 1 cup crushed ice-cubes
  • Enough soda water, well chilled

Instructions

  1. Divide sugar and peppermint leaves among serving glasses. Use a fork to crush the peppermint leaves. Divide the lemon slices among the glasses.
  2. Combine lemon juice and rum in a jug then divide the liquid among the glasses. Top with crushed ice-cubes and pour in soda water. Serve at once.
