- 1 lemon, thinly sliced
- 300ml fresh lemon juice
- 250ml rum
- 10-12 sprigs fresh peppermint leaves
- 50g castor sugar
- 1 cup crushed ice-cubes
- Enough soda water, well chilled
- Divide sugar and peppermint leaves among serving glasses. Use a fork to crush the peppermint leaves. Divide the lemon slices among the glasses.
- Combine lemon juice and rum in a jug then divide the liquid among the glasses. Top with crushed ice-cubes and pour in soda water. Serve at once.
