- 400ml freshly-squeezed lemon juice
- 125g castor sugar
- 4 cm piece cinnamon stick
- 1 litre water
- Put lemon juice, sugar and cinnamon stick in a heavy-based saucepan. Bring to simmer over a medium-low heat until sugar dissolves, stirring occasionally for about 8-10 minutes. Pour in the water and give it a stir. Cook for an extra 5-6 minutes or until the syrup comes to a boil again.
- Adjust the flavour to taste. Set aside to cool completely, then transfer to a jug, cover and refrigerate. Add crushed ice to the lemonade when serving the drink.
