Recipe Ingredient

  • 400ml freshly-squeezed lemon juice
  • 125g castor sugar
  • 4 cm piece cinnamon stick
  • 1 litre water


  1. Put lemon juice, sugar and cinnamon stick in a heavy-based saucepan. Bring to simmer over a medium-low heat until sugar dissolves, stirring occasionally for about 8–10 minutes. Pour in the water and give it a stir. Cook for an extra 5–6 minutes or until the syrup comes to a boil again.
  2. Adjust the flavour to taste. Set aside to cool completely, then transfer to a jug, cover and refrigerate. Add crushed ice to the lemonade when serving the drink.
