- 500gms green mango peeled and sliced
- 11/2 tblsp salt
- Sugar Syrup:
- 250gms sugar
- 1 cup water
- Combine mango and salt and marinate for 1 hour, stir occassionally to extract water from mango.
- Wash mango with boiled water and drain well. Leave to dry for 1 hour.
- Boil sugar and water and allow to cool.
- Pickle mango in glass jar and pour syrup over mango to cover completely.
- Pickle for 2 days before serving. Keep in the fridge.
- Note: chillies may be added in jar to spice up mango.
