Recipe Ingredient

  • Red or yellow watermelon
  • Honeydew or cantaloupe melon - however much you think you can eat
  • 2 - 4 mandarin oranges (depending on how much salad you´re making)
  • 2 lime
  • Sugar to taste

Instructions

  1. Remove the peel from the melons and cut the flesh into largish chunks or wedges. Thinly cut a little rind from both the lime and mandarin, including as little of the white pith as possible. Stack the rind and using a sharp knife, shred finely. (You need 1 - 2 tbsp of shredded rind, at most.)
  2. Squeeze the juice from one mandarin and half a lime. Stir in enough sugar to make a light syrup (about 2 - 3 tbsp) and add the shredded peel to this.
  3. Peel the skin from the rest of the mandarins and with a sharp knife, cut off any bits of remaining white pith. Cut mandarins into segments, discarding the membranes.
  4. Combine the melons and mandarins in a serving bowl and drizzle the syrup over. Serve cold.
