- 2-3 large egg whites
- 90g-100g castor sugar
- Put the egg whites in a very clean, dry and deep narrow bowl. Whisk using a balloon whisk until they form soft peaks.
- If you turn the bowl upside down, the egg whites should remain without falling out. Beat in the sugar in three batches, whisking well after each addition until the meringue looks glossy and stiff.
- Pile up the meringue over your pudding or tart then bake in a preheated oven at 150 ºC for about 20-30 minutes or until just pale or lightly golden.
