Recipe Ingredient

  • 50g butter
  • 60g canola/sunflower oil
  • 105g soft brown sugar
  • 2 eggs
  • 1/2 tsp vanilla essence
  • 150g banana, mashed
  • 20g ground almonds
  • 200g superfine flour
  • 3/4 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 30g sultanas
  • 2 tbsp milk
  • Garnishing
  • Some almond flakes

Instructions

  1. Grease 5 mini loaf pans and preheat oven to 170°C.
  2. Beat butter and canola/sunflower oil, sugar and essence until creamy. Add eggs, one at a time beating well after each addition.
  3. Mix in mashed bananas, ground almonds and sultanas.
  4. Sift in flour, baking powder and bicarbonate of soda to combine then add in milk but do not overmix.
  5. Spoon mixture into mini loaf pans until three-quarters full. Bake for 20-25 minutes or until cooked through when tested with a skewer.
