- 2 onions, finely shredded
- 8-10 bird's eye chillies, finely diced
- 1 red chilli, seeded and shredded
- 2-3 kaffir lime leaves, finely shredded
- 1 tbsp shredded wild ginger bud (bunga kantan)
- 1 tsp salt
- 2 tbsp sugar
- 2 limes, squeezed for juice
- Combine onions, bird's eye chillies and chilli in a big bowl. Adjust seasoning to taste and set aside for 10 minutes. Mix in kaffir lime leaves and wild ginger bud.
- Toss well, then dish out and serve with any meat dish.
