Recipe Ingredient

  • 100g margarine
  • 100g butter
  • 125g icing sugar
  • 1 tsp vanilla essence
  • 3 tbsp orange juice
  • 1 tbsp lemon juice
  • 1 tbsp grated orange rind
  • 1/2 tsp baking powder
  • 100g almonds, halved
  • Sift:
  • 300g plain flour
  • 50g custard powder

Instructions

  1. Grease baking trays with melted butter. Preheat oven at 180 ºC.
  2. Cream margarine, butter, sugar and vanilla essence until creamy. Add orange and lemon juice and orange rind. Beat for one more minute.
  3. Stir in sifted dry ingredients to combine. Fill mixture into a piping bag fitted with a star nozzle and pipe out cookies on prepared trays. Top up with a piece of almond.
  4. Bake in preheated oven for 15 minutes or until golden. Leave on the tray for five to 10 minutes before transferring the cookies on to a wire rack to cool.
