Recipe Ingredient

  • 600 gm fish fillets ( ikan kurau)
  • 450 ml thick santan
  • 4 tbsp rice flour
  • 3 eggs
  • 3/4 tsp salt
  • 3 limau purut leaves, finely sliced
  • 35 daun kadok leaves
  • 1 tsp pepper
  • 100 ml oil
  • Grounded Ingredients:
  • 8 shallots
  • 1 piece of belacan (or 1 tsp belacan powder)
  • 1 inch turmeric
  • 1 inch ginger
  • 1 inch lengkuas
  • 2 cloves garlic
  • 3 fresh red chilli
  • 1 serai

Instructions

  1. Cut the fish fillets into thin slices. In a bowl put in the rice flour and thick santan. Mix well before putting in the egg one at a time. Beat mixture until smooth Add in ground ingredients, salt and oil. Mix well before putting in the fish fillets and limau perut leaves. After putting in the fish stir it very lightly to mix well.Line a 20cm dish with the kadoh leaves. Pour the fish mixture over it. Steam for 1/2 hour over rapid boiling water.
