- Dissolve salt in the hot water. Sift flour into a mixing bowl. Pour in salted water and add the egg.
- Knead well until a smooth dough is formed. Shape dough into a round ball and wrap with cling film and leave aside to rest for 5-8 hours.
- Pull off a small portion of the dough. Flatten it and pinch off small neat pieces. Drop them into a pot of boiling water. Cook until they start to float and the dough is cooked through.
- Remove with a slotted ladle and put into a bowl of ice water. Leave the pieces of dough for 2-3 minutes. Dish out, drain and use as noodles for any soupy dish.
