- 250g tang mein fun (wheat flour)
- 125g tapioca flour
- 1 tsp salt
- 520ml boiling water
- 30g lard/shortening
- Combine both flours in a large mixing bowl. Mix in salt and make a well in the centre of the flour.
- Pour in boiling water and stir with a wooden spoon to mix until a lump of dough is formed.
- Add the lard/shortening and knead until a smooth dough is formed. Roll out the dough into a long sausage. Cut into even pieces and roll each into a ball. Use it as a wrap for your filling.
