Recipe Ingredient

  • 100 g butter
  • 100 g cream cheese
  • 90 g castor sugar
  • 1 tsp grated lemon rind
  • 1/2 tsp vanilla essence
  • 2 big eggs (Grade A)
  • Sifted:
  • 120 g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/8 tsp salt
  • 50 ml whipping cream
  • 70 g coarsely chopped fresh pineapple
  • 2 tbsp almond nibs

Instructions

  1. Line and lightly grease a 20 cm cake pan. Preheat oven at 180°C.
  2. Cream butter, cream cheese, sugar, lemon rind and vanilla essence until light and fluffy.
  3. Beat in eggs, one at a time, and beat well after each addition.
  4. Add in sifted dry ingredients and salt. Stir in whipping cream and chopped pineapple.
  5. Pour batter into prepared cake tin. Sprinkle almond nibs over and bake in preheated oven for 30-35 minutes or until cooked when tested with a skewer.
