Recipe Ingredient

  • 1 pork leg (1kg), cut into sizeable pieces
  • 550ml water
  • 100g rock sugar
  • 100g palm sugar
  • 250g old ginger, smashed
  • 3 whole bulbs smoked garlic
  • 150ml black vinegar (chit choe)
  • 250ml sweet vinegar
  • 10 dried chillies
  • 5 bird´s eye chillies
  • Seasoning:
  • 2 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp thick soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Marinate pork leg pieces with seasoning
  2. Fry ginger in a heavy-based pot until fragrant.
  3. Add marinated pork leg, garlic, dried chillies and bird´s eye chillies. Pour in both types of vinegar and add rock sugar and palm sugar. Bring to a boil.
  4. Add water then cook for 1 hour or until meat is tender.
