- Clean potato skin well and put in a saucepan with enough water to cover. Add a pinch of salt. Cook for 10 minutes. Remove and skin the potato, then grate coarsely.
- Steam salmon fillet for 10 minutes. Flake the fish. Combine grated potato, salmon, onion, corn kernels, spring onion, egg, flour and seasoning in a mixing bowl. Stir well to combine.
- Lightly grease a non-stick saucepan with corn oil. Spoon tablespoons of combined mixture into the saucepan. Spread out evenly into clusters. Fry for 1-2 minutes each over a medium-low heat.
- Remove and serve patties immediately.
