Recipe Ingredient

  • 1 chicken, cut into pieces
  • 2 small packets kurma/2 tbsp curry spices
  • 1/4 cup kerisik
  • 4 cups coconut milk
  • Salt to taste
  • Gula Melaka to taste
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves, coarsely cut
  • 2 turmeric leaves, finely cut
  • Ingredients to grind:
  • 10 red onions
  • 4 shallots
  • 15 cili padi
  • 15 dried chillies
  • 2cm ginger
  • 2cm galangal
  • 1cm fresh turmeric

Instructions

  1. Fry the ground ingredients with lemongrass until fragrant.
  2. Put in the kurma spices and fry some more.
  3. Put in the coconut milk and kerisik. Mix well.
  4. Put in the chicken.
  5. Put in the turmeric leaves, lime leaves, salt and gula Melaka.
  6. Cook until thick.
