Recipe Ingredient

  • 10 large prawns, trimmed
  • 1 onion, chopped
  • 3-4 tbsp oil
  • 250ml coconut milk
  • 2 stalks lemon grass, smashed (Ground spice ingredients)
  • 3 slices galanggal
  • 5 dried chillies, soaked and seeded
  • 10 fresh red chillies
  • 3 cloves garlic
  • 1 thumb size fresh turmeric or 1½ tsp turmeric powder
  • 2 candlenuts
  • 1 tsp belacan stock granules
  • Seasoning
  • ½ tsp salt or to taste
  • 1 tsp sugar
  • ½ tsp chicken stock granules
  • ¼ tsp ikan bilis stock granules

Instructions

  1. Heat oil in a saucepan and sauté onion until soft and fragrant. Add ground spice ingredients and lemon grass. Fry until aromatic.
  2. Add prawns and coconut milk then bring to a boil. Adjust with seasoning to taste. Serve immediately.
