Preheat oven to 180°C and lightly grease a 12-hole friand pan or muffin pan.
Combine icing sugar, breadcrumbs and flour in a mixing bowl. Add melted butter, milk and essence. Stir gently until well combined.
In a clean bowl beat egg whites until frothy, then fold into breadcrumb mixture. Gently fold in raspberries.
Divide mixture evenly into prepared pan and bake for 25-30 minutes or until a skewer inserted into the centre of a friand comes out clean. Stand friands in the pan for 5-6 minutes before turning out onto a wire rack to cool completely.
