Recipe Ingredient

  • 1 honeydew melon, cut off 1/3 from the top and cube this
  • 100g ripe mango, cubed
  • 100g water-chestnuts, cubed
  • 1 green apple, cubed and soaked in salt water
  • 1 tin longan, drained well
  • Some red marachino cherries
  • Dressings:
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp sugar
  • Pinch of salt
  • Garnishing:
  • Pistachio nuts, shelled

Instructions

  1. Carve the edge of the remaining melon to make a basket. Scoop out the seeds and trim the sides neatly.
  2. Prepare the honeydew basket and chill in the refrigerator. Chill the cut fruits as well.
  3. Mix dressing ingredients in a bowl and chill well. Just before serving, toss all the ingredients with the dressing and add the pistachios.
  4. Put salad ingredients into the honeydew basket and serve.
