- 1 oxtail, cut into 5-6 cm pieces
- 20g tong kwai, sliced thickly
- 2 slices ginger
- 1.5 litres hot water
- Salt and sugar to taste
- Parboil oxtail pieces in hot boiling water for 5-6 minutes. Remove and rinse in running tap water.
- Combine oxtail, tong kwai, ginger and water in a double-boiler. Double-boil for two hours. Add seasoning to taste then serve soup hot.
