Recipe Ingredient

  • 500g Basmati rice
  • ½ tsp turmeric powder
  • 2 tbsp ghee
  • 1 tbsp oil
  • 6 slices ginger
  • 2 cloves garlic, smashed
  • 780ml water
  • 55ml evaporated milk
  • ½ tsp chicken stock granules
  • ¼ tsp salt
  • 2 screwpine leaves, knotted
  • 40g raisins
  • Ingredients (A)
  • 3cm cinnamon stick
  • 2 star anise
  • 5 cardamoms
  • 4 cloves
  • ½ tsp turmeric powder
  • 1 tsp ground fennel

Instructions

  1. Wash rice and soak in water mixed with ground turmeric for 30-35 minutes. Drain the rice well.
  2. Heat ghee and oil. Fry ginger and garlic until fragrant. Add ingredients (A). Stir in water, evaporated milk, stock granules and salt.
  3. Put rice in a rice cooker. Rake rice with a fork and add the cooked mixture and screwpine leaves. Cover and cook. Stand rice for 15 minutes, then fluff up and stir in raisins.
