Recipe Ingredient

  • 5 chicken drumsticks
  • 1 tbsp light soy sauce
  • 3 tbsp oil
  • Ground spices (A):
  • 6 shallots
  • 4 cloves garlic
  • 1.5cm piece galangal
  • 2 stalks lemon grass
  • 4 tbsp chilli paste
  • 3 kaffir lime leaves, sliced
  • 200ml thin coconut milk
  • 3 tbsp lime juice
  • 1 tbsp sugar or to taste
  • 1 tbsp fish sauce

Instructions

  1. Marinate chicken with light soy sauce for 20-25 minutes.
  2. Heat oil and fry ground (A) until fragrant. Add in chicken and stir to mix.
  3. Pour in coconut milk and bring to a low simmering boil for 8-10 minutes.
  4. Add lime juice, sugar and fish sauce and continue to simmer for 4-5 minutes until sauce turns thick.
  5. Dish out and set aside.
  6. Wrap chicken drumsticks in foil then barbecue over a hot barbecue pit for 8-10 minutes, turning over frequently.
