Recipe Ingredient

  • 4 pieces chicken drumsticks, boned
  • 3/4 tsp salt
  • Marinade – (ground and combined)
  • 5 shallots
  • 3 cloves garlic
  • 2 stalks lemon grass
  • 2cm piece galangal (lengkuas)
  • 50g ginger
  • 2cm piece fresh turmeric
  • 3 candlenuts (buah keras)
  • 1½ tbsp chilli paste (chilli boh)
  • 1½ tbsp coriander powder
  • Seasoning
  • 1 tbsp salt
  • 5 tbsp castor sugar
  • 2 tbsp tomato paste

Instructions

  1. Season chicken with salt for 10–15 minutes. Put chicken into a deep saucepan, add enough water to cover the chicken, then bring to a boil for 8-10 minutes. Drain well.
  2. Combine ground marinade ingredients with the seasoning. Brush the marinade over the chicken and leave aside to marinate for at least 2 hours. Place the marinated chicken on a roasting rack and grill in a preheated oven at 200°C for 40–45 minutes, brushing occasionally with a little corn oil until meat is cooked through or golden brown.
