Recipe Ingredient

  • 12-14 medium prawns
  • (A)
  • 1/4 tsp salt
  • 3/4 tsp sugar or to taste
  • 3/4 tsp pepper
  • 1/2 tsp ikan bilis stock granules
  • Batter
  • 100g rice flour
  • 25g corn flour
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1½ tbsp meat curry powder
  • 1 red chilli, chopped
  • 1 green chilli, chopped
  • 1 tbsp chopped coriander leaves
  • Enough water to make into a fairly thick batter

Instructions

  1. Clean, de-vein and peel the prawns leaving the tails intact. Marinate the prawns with seasoning (A) and leave aside for 20 minutes.
  2. Mix all the ingredients for the batter together. The consistency of the batter should be thick enough to coat the prawns.
  3. Heat enough oil in a wok until just hot. Dip the prawns in the batter and deep-fry until crispy and golden brown. Serve the prawn fritters immediately.
