Spicy Roast Chicken

Seasoning (A) - (combined)
Marinade (B) - (combined)
  1. Cut chicken right through the breast and clean well. Pat dry thoroughly with paper kitchen towels and open up the chicken flat on a roasting pan. Slightly break the joints to make it easier to press down the fowl. Use a sharp skewer or satay stick and prick all over.
  2. Sprinkle combined seasoning (A) all over the skin and meat side. Rub evenly then put it aside for 2-3 hours at room temperature in an airy place.
  3. Spread combined marinade (B) on the chicken and place the bird on a rack in a roasting pan. Roast chicken at 190-200°C for 20 minutes. Cover with foil and continue to roast for another 20 minutes. Turn the bird meat side up and roast for an extra 10 minutes. Return the bird to its original position and continue to roast for another 5-10 minutes. In between roasting brush the bird with remaining marinade (B).
