
Supreme prosperity pot

Start the New Year with a simple but splendid dish.
Ingredients
- 1.2kg free-range or kampung chickencut into 8 pieces
- 350g trottercut into pieces
- 50g Chinese hamsliced, Jin Hua ham
- 200g lotus rootcut into rounds
- 8 red dates
- 3 dried figs
- 1litre water
- 25g dried scallopssoaked in
- 1/2cup warm water until just softened
- 100g soaked sea cucumbercut into pieces
- 200g fresh Huai Shancut into rounds
Seasoning
- 1/2-1tsp salt
- 1tsp rock sugar
- 1tsp Shaoxing rice wine
Instructions
- Arrange chicken, trotter, Chinese ham, lotus root, red dates and figs in a double boiler. Add in water. Steam or double-boil for an hour.
- Add in soaked dried scallops, sea cucumber and Huai Shan.
- Continue to double-boil for a further 30 minutes until all the meat is tender.
- Season to taste with salt and rock sugar, and add a splash of rice wine.
