Instructions
  1. Arrange chicken, trotter, Chinese ham, lotus root, red dates and figs in a double boiler. Add in water. Steam or double-boil for an hour.
  2. Add in soaked dried scallops, sea cucumber and Huai Shan.
  3. Continue to double-boil for a further 30 minutes until all the meat is tender.
  4. Season to taste with salt and rock sugar, and add a splash of rice wine.
