Recipe Ingredient

  • 200g yam
  • 10g flour
  • A pinch of salt and sugar
  • 60g pineapple, sliced
  • 60g green bell pepper
  • 60g red chillies
  • 1 soft tofu
  • 10g oil
  • 100ml sweet and sour sauce (tong chou)
  • Sweet and Sour Sauce:
  • 80g white vinegar
  • 100g pin tong
  • 60g tomato sauce
  • 5 seen mui chee (sour plum, deseeded)
  • 30g Lea Perrins sauce
  • 2 slices lemon

Instructions

  1. To make the sauce, mix all ingredients for the sauce together and cook until sugar dissolves.
  2. Steam yam and mash it. Mix with flour, salt and sugar, and shape into a basket. Deep-fry the yam basket (fatt put) until golden brown. Set aside.
  3. Dice soft tofu and deep-fry till golden brown.
  4. Stir-fry pineapple, green bell pepper and red chillies. Add fried tofu and sweet and sour sauce.
  5. Place all the fried ingredients into the yam basket and serve.
