Recipe Ingredient

  • 135 ml cold water
  • 3/4 tsp salt
  • 30 gm butter
  • 1/2 egg
  • 60 gm mashed sweet potato
  • 300 gm bread flour
  • 3/4 tbsp milk powder
  • 35 gm sugar
  • 2 tsp instant yeast

Instructions

  1. Put all the ingredients into the bread machine in the order listed above. Set to dough cycle. Knead it for 25 minutes to form a smooth dough. Put the dough in a bowl, cover it and let it prove for 45 minutes. The best place to prove the dough is in the oven without switching it on. Put two cups of hot water in the oven to provide some heat and water vapour.
  2. Punch the dough down and knead it for about 1/2 minutes. Mould the dough into a ball. And let it rest for 15 minutes. Divide the dough into small portions of 30 gm each Roll each portion into a ball. Put them on a greased 25 cm square baking tray lined with baking paper or aluminum foil). 16 pieces per pan. Cover it and let it prove for 40 minutes.
  3. Brush with egg wash and pipe the custard to make a cross on top. Bake at 180C for 20 minutes or until golden brown.
  4. Note: If you do not have a bread machine you can use an electric mixer with a hook. Knead it for 25 minutes to form a smooth dough.
