1/2 a fish head (garoupa, threadfin or red snapper)approximately 500-600g
1/2 tbsp ginger juice
1 tsp light soy sauce
1/2 tsp sugar
1/2 onion (chopped finely)
2 tbsp chopped garlic
1 tsp chopped bird's eye chillies
1 tsp finely chopped galangal
1 tbsp finely chopped lemongras(use only the white portion)
1 tbsp light soy sauce
1 tbsp sugar
1 tbsp fish sauce
2-3 tbsp water
Dash of pepper
1 tsp sesame oil
Some chilli and spring onion curls, and coriander leaves
Clean the fish head well and season with ginger juice, light soy sauce and sugar for 20-25minutes.
Place a pair of chopsticks onto a steamingdish and put the fish head over. Steam overrapidly boiling water for 10 minutes. Removethe fish from the steamer and pour away theexcess water.
Return the fish to the steamer and spreadthe combined ingredients (A) over the fish.Steam for 3 minutes. Open the wok or steamerand pour the combined seasoning ingredientsover and continue to steam for 2-3 minutes.
