Recipe Ingredient

  • 500g turkey drumsticks, boned and cubed
  • 1 carrot, cut into wedges
  • 2 potatoes, cut into wedges
  • 1/2 cup petai seeds
  • 1/2 cup coconut milk
  • 1/2 cup plain yoghurt
  • 4 tbsp oil
  • Spices (A)
  • 4 shallots
  • 3 cloves garlic
  • 2cm piece ginger
  • 3 tbsp meat curry powder
  • 1 tbsp chilli paste
  • 1cm piece galangal
  • Spices (B)
  • 2 stalks lemon grass, lightly smashed
  • 1 star anise
  • 3 cloves
  • 2 cardamoms, split and use seeds only
  • 2cm piece cinnamon stick
  • 2 stalks curry leaves
  • Seasoning
  • 1 tsp salt or to taste
  • 1/2 tsp sugar
  • 1/2 tsp chicken stock granules

Instructions

  1. Heat oil in a wok and fry (A) and (B) until fragrant. Add turkey meat and fry for 3–4 minutes until meat changes its colour.
  2. Add carrot and potatoes to mix. Pour in coconut milk and bring to a boil then simmer until turkey meat turns tender.
  3. Stir in yoghurt and continue to cook for 3–4 minutes. Add petai and seasoning to taste. Dish out and serve.
