Instructions
  1. For cake: Mix all the dry ingredients and sugar well.
  2. In a separate bowl, beat in all the wet ingredients until it is mixed well.
  3. Then mix the wet ingredients together with the dry ingredients.
  4. Scoop out the batter into a cupcake pan that is lined with cupcake paper cups. The batter should fill out 3/4 of the cup.
  5. Bake in a preheated oven at 180 degrees Celcius for 15 -20 minutes depending on the size of the paper cups.
  6. Remove from oven when baked and let it cool. Tip: Use a really ripe banana for a rich tasting cake.
For icing
  1. Beat margarine, sugar and shortening until light and fluffy.
  2. Add vanilla essence.
  3. Divide the icing sugar according to preferred colours.
  4. Keep the icing in a piping bag and decorate the cupcake.
  5. Tip: For two tones, add one or two-coloured icing into the piping bag.
