Recipe Ingredient

  • 150g tomatoes
  • 75g carrot
  • 3 red chillies
  • 6 bird's eye chillies
  • 1 stalk lemon grass
  • 4 slices galangal
  • 10g fresh turmeric
  • 75ml oil
  • 15g tamarind slices
  • 75g castor sugar
  • 300g chilli paste
  • 1 tsp salt

Instructions

  1. Combine tomatoes, red chillies, carrot, bird´s eye chillies, lemon grass, galangal and turmeric in a food processor. Blend into a fine paste.
  2. Heat oil in wok and add in blended spice paste and fry until fragrant. Add chilli paste and stir-fry until oil separates. Add tamarind slices, sugar and salt to taste. Dish out and leave to cool.
