- 500g yam beans
- 200g dried Chinese mushroom stalks
- 100g big head soy bean sprouts (tai tou nga)
- 80g yok chok, rinsed
- 80g tai tow choy, rinsed and sliced thickly
- 50g red dates, seeded
- 3 litres water
- Bring water to the boil. Add in all the ingredients and cook to a boil. Reduce the heat and simmer for 1½ - 2 hours. Strain the stock before use.
