Recipe Ingredient

  • 1 large old coconut
  • 15 gingko nuts
  • 10g white fungus, soaked
  • 4 Chinese dried red dates – rinsed, seeded and slit to release flavour
  • 10g dried longan flesh – rinsed
  • 100g rock sugar
  • 500ml hot water

Instructions

  1. Saw off the top small section of the coconut and keep as a lid. Drain the coconut water and rinse the inside. Do not remove the flesh. Stand the coconut on a bowl and fill the bowl to cover half the coconut. (This helps to prevent the coconut from cracking during steaming.)
  2. Bring water to a boil. Add in gingko nuts, white fungus, red dates, rock sugar and longan flesh. Simmer for 8-10 minutes, then pour contents into the coconut.
  3. Place the bowl with the coconut onto a steamer and steam over gently boiling water for 2–2 ½ hours.
  4. Remove and serve the sweet soup hot.
