4 Chinese dried red dates - rinsed, seeded and slit to release flavour
10g dried longan flesh - rinsed
100g rock sugar
500ml hot water
Saw off the top small section of the coconut and keep as a lid. Drain the coconut water and rinse the inside. Do not remove the flesh. Stand the coconut on a bowl and fill the bowl to cover half the coconut. (This helps to prevent the coconut from cracking during steaming.)
Bring water to a boil. Add in gingko nuts, white fungus, red dates, rock sugar and longan flesh. Simmer for 8-10 minutes, then pour contents into the coconut.
Place the bowl with the coconut onto a steamer and steam over gently boiling water for 2-2 ½ hours.
