4 Chinese dried red dates rinsed, seeded and slit to release flavour
10g dried longan flesh rinsed
100g rock sugar
500ml hot water
Saw off the top small section of the coconut and keep as a lid. Drain the coconut water and rinse the inside. Do not remove the flesh. Stand the coconut on a bowl and fill the bowl to cover half the coconut. (This helps to prevent the coconut from cracking during steaming.)
Bring water to a boil. Add in gingko nuts, white fungus, red dates, rock sugar and longan flesh. Simmer for 8-10 minutes, then pour contents into the coconut.
Place the bowl with the coconut onto a steamer and steam over gently boiling water for 22 ½ hours.
