Butter for spreading
fresh white button mushrooms
Coarse ground black pepper
For the toast: Cut the bread into slices and butter one side. Place the bread slices on a nonstick saucepan and toast until crisp and lightly browned on both sides. Remove and set aside.
For the topping: Heat the 2 tablespoons butter in a nonstick frying pan over medium heat. Add mushrooms and saute until lightly browned.
Add the leek and stir-fry until aromatic. Season to taste with salt, sugar and pepper.
Add the capsicums and fry briskly. Toss with balsamic vinegar and remove from heat.
To assemble: Place a tablespoon of topping on each slice of toast. Sprinkle over with coarse ground black pepper.
Arrange on a party tray and serve immediately.
