Recipe Ingredient

  • 720g mixed fruits
  • 100g almond flakes
  • 1 green apple, grated
  • 1 carrot, grated
  • Zest from an orange
  • Juice of an orange
  • Juice of a lemon
  • 140g shortening (melted)
  • 140g flour
  • 72g bread crumble
  • 144g brown sugar
  • 4g mixed spice
  • 4g cinnamon star
  • 4g nutmeg
  • 4g salt
  • 3 eggs
  • Sugar caramel
  • 500g sugar
  • 200g water

Instructions

  1. Mix and marinate mixed fruit, almond flakes, apple, carrot, orange zest and juice, lemon zest and juice for 30 days.
  2. Add flour, bread crumble, brown sugar and other spices and salt in bowl.
  3. Then, mix the marinated fruits in mixer bowl.
  4. Mix slowly and add melted shortening.
  5. Add egg in and mix slowly.
  6. Prepare cake ring, wrap with aluminium foil and place on baking tray.
  7. Prepare sugar caramel; boil the sugar and water at 160 degrees Celcius. Then pour on the cake ring which is wrapped with aluminium foil.
  8. Then, leave the sugar to set and put the X’mas Pudding mixture on top of the sugar caramel.
  9. After filling the cake ring with mixture, cover the top with aluminium foil.
  10. Make a water bath and put the cake ring in the water bath. Bake for 3 hours at 120 degrees Celcius.
  11. After baking, let it cool and remove the ring. Serve with vanilla sauce.
