- 200g plain flour
- 80g sugar
- 2 tsp baking powder
- 1tsp salt
- 1 egg
- 185ml yogurt
- 90ml corn oil
- 150g fresh/frozen(thawed) blueberry
- In a large mixing bowl, stir in flour,sugar, baking powder and salt.
- Then, make a well in a centre.
- Combine egg, milk and oil. Add the egg mixture all at once to flour mixture.
- Mix well. Fold blueberry into batter. The batter should be lumpy.
- Grease muffin the tray. Fill 3/4 full.
- Bake 190 degrees Celcious for 25 minutes. Serve warm.
