Recipe Ingredient

  • 500g glutinous rice, washed and soaked overnight
  • 1 tbsp alkaline water
  • 1 tsp oil
  • 100g lotus seed paste
  • Bamboo leaves
  • Hemp string for tying

Instructions

  1. Clean and soak the bamboo leaves and hemp string. Drain glutinous rice. Add alkaline water and oil to mix.
  2. To wrap dumplings: Take two leaves and fold into a cone shape. Put in a heaped tablespoon of glutinous rice. Add a teaspoon of lotus seed paste in the centre of the rice. Cover with more rice. Wrap into a cone and secure with hemp string.
  3. Knot all the dumplings into a bunch. Bring a pot of water to a rapid boil. Lower the bunch of dumplings into the water. Make sure there is enough water to cover the dumplings.
  4. Let them boil for three hours. Top up constantly with water to maintain the level of the water at all times. Drain/dry the dumplings once they are cooked through.
