Deep Fried Wombats


4 tablespoons Sausage Meat
1 teaspoon Salt
2 teaspoons Chopped Parsley
3 hard boiled Eggs
2 tablespoons Flour
1 beaten Egg
4 tablespoons Bread Crumbs
frying Oil
Parsley sprigs


Mix sausage mince, salt and chopped parsley well.

Remove shells from eggs.

Cover the eggs with sausage mince retaining egg shape.

Lightly dust with flour.

Cover in beaten egg.

Toss in bread crumbs and refrigerate to firm.

Fry for around five minutes in hot oil.

Drain on paper towel.

Cut each in halves lengthwise.

Top with a dob of sweet chili sauce and a sprig of parsley.
