Eggless Cake


120g margarine
110gm castor sugar
1 tbsp lime juice
250g bananas, mashed
1/2 tsp vanilla essence


250g self-raising flour
½ tsp baking powder
½ tsp bicarbonate of soda


Line and grease a 20cm square or round cake pan. Preheat oven to 180-190°C. Beat margarine, sugar and essence till light and fluffy. Stir in lime juice. Fold in sifted flour.

Add in mashed bananas with a metal spoon. Mix in gradually. Pour mixture into a prepared cake pan.

Bake in preheated oven for 40-45 minutes or until cake is cooked through when tested with a skewer.
