Fish Stock

Ingredients

1kg fish bones
100g onion, diced
50g carrot, diced
40g leek, diced
40g celery, diced
1 bay leaf
5g white peppercorns
5g garlic, crushed
5g fresh basil
5g fresh dill
2.5g fresh thyme
2.5g fresh tarragon
20g lemon wedge
80ml white wine
5l water

Method

Wash the fish bones. Place all the ingredients in a pot. Bring to the boil and simmer for 45 minutes. Remove and strain. Reserve for later use.
