Spicy Kuih Siput

Ingredients

70g castor sugar
125ml thick coconut milk
25ml water
250g plain flour
1 tbsp rice flour
1 tsp meat curry powder
A dash of ground black pepper
1/8 tsp salt
1 tsp margarine or butter

Method

Combine sugar, thick coconut milk and water in a small jug. Stir until sugar dissolves. Sift flour and rice flour into a mixing bowl. Stir in curry powder and salt to mix. Add in margarine or butter and mix until crumbly.

Pour in coconut syrup gradually. Mix into a smooth and soft dough.

Divide dough into 4 equal round portions. Press each ball of dough onto a wooden or plastic kuih siput mould. Roll up the small pieces into a snail-like shape. Deep-fry these pieces until
crispy and golden. Drain on absorbent kitchen paper.
