Christmas Ginger Bread

Ingredients

(1)

1.6kg bread flour
4g cinnamon powder
40g ginger powder
24g Ammonia bicarbonate

(2)

160g milk

(3)

120g eggs
40g sugar

(4)

640g honey
480g sugar
100ml water

Method

Pre-heat the oven at 180 degrees Celcius.

Mix ingredients (1) in 1 bowl and add in (2) to become paste.

Beat in ingredients (2) with high speed whisk.

Boil ingredients (4) till it´s 115 degree Celcius and add into (3) while continue whisking.

Using the dough attachment, mix everything until it becomes dough.

Roll out dough to thickness of 1.5mm and cut out desired shape.(Gingerbread man, Gingerbread house, Star, etc)

Bake at 180 degrees Celcius for 20 minutes until it is golden brown colour.

Assemble it using royal icing after it cools. Decorate royal icing.

This recipe can get 3kg dough portion.
