Christmas Pudding

Ingredients

(1)

1 orange, grate the zest
60g prunes
429g raisin
300g sultanas
300g black currant
1 lemon, grate the zest
180g bread crumbs
180g cake flour
90g almond slice

(2)

1/2 tsp nutmeg powder
1/2tsp cinnamon powder
360g brown sugar
6 eggs
360g beef suet
1 apple, grated
1 carrot, grated
71ml fresh milk

(3)

1/2 black treacle
1/2 mixed spice powder

Method

Pre-heat the oven at 150 degrees Celcius.

Mix well the ingredients (1).

Mix ingredients (2): nutmeg powder , cinnamon powder , brown sugar , beef suet, with whisk . Then add in slowly the eggs and milk, also the grated carrot and apple.

Mix the black treacle and mixed spice powder (3) and fold in into the batter.

Lastly, pour in the batter in long baking insert & cover it tight with parchment paper and aluminum foil. Underneath the insert put the wet cloth to maintain the temperature.

Bake in a steam bath for 6 hours until it is cooked.

This recipe can get 15 portion.
