Recipe Ingredient

  • 1 mud crab, halved and cleaned
  • 100g glass noodles, soaked until soft
  • 2 tbsp oil
  • 1 tbsp sesame oil
  • 2 stalks spring onion, cut into 3-4 cm lengths
  • 1 tbsp tamarind paste mixed with 250ml water and strained
  • Ingredients (A)
  • 1 tbsp dried prawns, coarsely chopped
  • 2 shallots, minced
  • 2 cloves garlic, minced
  • 2 tbsp tom yam paste
  • Seasoning (B)
  • 1 tbsp sugar
  • 1 tbsp oyster sauce
  • ½ tsp pepper
  • 1 tsp chicken stock granules
  • 1½ tsp fish sauce or to taste
  • 2-3 tbsp lime juice

Instructions

  1. Heat oil and sesame oil in a wok and fry ingredients (A) until fragrant. Pour in tamarind juice and bring to a boil.
  2. Transfer the spice paste into a claypot. Add crab, glass noodles, spring onion and seasoning (B). Toss until well combined.
  3. Serve immediately.
