Recipe Ingredient

  • 3-4 hardboiled eggs (halved)
  • 1 tsp chilli powder
  • ½ tsp ground paprika
  • Mix together
  • ½ tsp freshly ground ginger
  • 2 tbsp ground coriander
  • 2 tsp garam masala
  • 1 tsp ground turmeric
  • 2 tsp ground cumin
  • 3 medium onions (chopped)
  • 4 cloves garlic (chopped)
  • 1 tbsp oil mixed with 1 tbsp ghee
  • 1 (400 g) tin chopped tomatoes
  • 1 tsp lemon juice
  • 1 tsp tomato ketchup
  • 1 dsp tomato puree
  • 1 cup milk
  • salt and pepper to taste
  • fresh coriander leaves for garnishing

Instructions

  1. Mix together all the spices with 1/3 cup milk.
  2. Heat oil and ghee in a saucepan. Sauté the onions and garlic until soft and fragrant.
  3. Add in the spice paste together with the canned tomatoes and the tomato puree. Stir until mixture begins to boil.
  4. Add in the remaining milk. Cook on low heat until mixture thickens. Add the lemon juice, tomato ketchup and egg halves. Cook gently until mixture begins to boil. Remove from heat. Garnish with fresh coriander leaves.
