Recipe Ingredient

  • 200g fish fillet, sliced thickly
  • 6 medium large prawns, shelled leaving tails intact
  • A dash of salt and pepper
  • 1 egg, beaten
  • 3-4 tbsp cornflour
  • Batter
  • 5 tbsp plain flour
  • 3 tbsp cornflour
  • 1 tbsp rice flour
  • ½ tsp salt
  • ¼ tsp pepper
  • 1/8 tsp ground black pepper
  • 100ml water
  • 2 tbsp corn oil
  • Dipping sauce (combined)
  • 2 tbsp mayonnaise
  • 1 tbsp chilli sauce
  • ½ tsp mustard (optional)
  • 1 tbsp lemon juice

Instructions

  1. Lightly season fish with salt and pepper. Cut a slit in the back of the prawns and remove the black entrails. Put fish and prawns in a deep plate. Add the beaten egg. Toss in cornflour. Shake off excess flour and put aside.
  2. Mix batter ingredients and leave aside to rest for 10 minutes. Dip fish and prawns in the batter and deep-fry in hot oil until crispy and golden brown. Remove and drain. Serve with the dipping sauce.
