Lobster Crab Salad
300g lobster meat
150g cooked crab meat
5 stuffed olives, sliced
3 tbsp mayonnaise
2 tbsp salad cream
1 tbsp chopped gherkin
1/2 tsp Sarson´s Worcester sauce
1/4 tsp ground black pepper
1/4 tsp salt
1 tsp lemon juice
1 tsp sugar
Remove the lobster head, clean well and parboil. Use as a decoration for your dish.
Halve the lobster, remove the shell and season meat lightly with salt and sugar. Scald in boiling water for 8-10 minutes until meat is cooked. Leave to cool then keep the meat in the refrigerator till well chilled. Cut the lobster meat into lcm-thick slices.
Add 1/2 tbsp lemon juice to the crab meat and mix well. Leave aside to marinate for at least 10 minutes. Do not marinate for more than half an hour or the meat will disintegrate.
Mix the salad dressing and keep well-chilled in the refrigerator. Place the lobster slices on a large plate, top up with crab meat and pour the salad dressing over.
Garnish with stuffed olive slices. Toss well before serving.
